Strawberry-Goji Happiness Smoothie

Strawberry-Goji Happiness SmoothieAuthor: Lily Mazarella
This light, creamy, not-overly-sweet treat features vitamin C-rich springtime strawberries and goji berries, a.k.a. Happiness Berry or Wolfberry. Goji is a traditional Chinese medicine used for liver and kidney deficiency patterns, for "brightening" the eyes (no wonder, as it is chock-full of carotenes and anti-inflammatory pigments), and promoting happiness and longevity. In a 2-week clinical trial, daily consumption of goji berries was found to increase energy and well-being ("happiness") and improve digestion in the lucky participants.

Ingredients

6-8 frozen strawberries
1 small handful dried Goji berries (don't worry if you don't have them; the recipe is equally delicious without!)
1/4 avocado
1 rounded teaspoon coconut oil
1 tbsp chia seeds
2 tbsp hemp seeds
1/2 date (optional)
12-16 oz water, depending upon desired thickness (this smoothie will thicken a bit as it stands, or overnight in the fridge)
1 tsp vanilla
1 pinch pink Himalayan salt
3-6 drops liquid organic stevia
1 serving protein powder of choice – we like Nutribiotics raw, sprouted brown rice protein powder

Blend all ingredients and adjust liquid to desired consistency. Dried goji berries can be a bit tough, for best results soak overnight to soften.

*Goji is in the nightshade family, so if you have other nightshade sensitivities (which can manifest as joint pain and/or reflux), or you are doing the cleanse as an allergy-elimination diet, leave the goji out.
