Sweet Potato Rounds + Stress-Adapt Nut Butter

Sweet Potato RoundsSome of us crave carbs, some of us crunchy…others of us…we know who we are…crave sweet. Here’s a supercharged snack that satisfies that itch. 

Ingredients

1-2 sweet potatoes (adjust for desired leftovers)
Extra virgin olive oil

For the Stress-Adapt Nut Butter:

1 c nut butter of your choice
1 tbsp Farmacopia Stress-Adapt Pow[d]er
2 tbsp honey or maple syrup
Sprinkle of ground cinnamon

Instructions

Peel sweet potatoes and slice into 1 inch rounds.

Brush both sides with olive oil.

Roast at 350 F for 30 minutes, turning once.

Raise temp to 400 F. Roast 15 – 20 minutes until golden brown.

Place 2-3 rounds on a plate and wrap the rest up and refrigerate.

Enjoy as is with a little salt & pepper or top each round with 1/2 tbsp nut butter for extra protein.

For additional adrenal support, I like to boost my nut butter with a healthy dose of Stress-Adapt Pow[d]er.

Mix all ingredients thoroughly. Store in airtight container and refrigerate. I always like to have some of this on hand to slather on sliced apples and celery sticks or include in my morning protein smoothie!
