Peach-Berry Cobbler with Super Power Paleo Granola

No doubt about it: stone fruits are one of the great joys of summer. Fueled with protein and topped with berries and crunchy, no-grain, adaptogen-kissed granola, this smoothie bowl is a peachy start to your day.

Ingredients

1/2 cup chia gel (To make the gel, soak 3 tbsp of chia seeds in 1.5 cups of water overnight in the fridge in a mason jar.  Shake every hour or so for the first few hours to encourage the chia to disperse and “bloom” into an ample gel)

1 small-medium fresh or frozen organic peach

1/4 cup brazil nuts and/or cashews, best soaked overnight

4 oz coconut milk, nut milk, or unsweetened non-dairy yogurt of choice

4-5 drops organic liquid stevia or 1 frozen date for optional sweetness

Serving of protein powder of choice

1/3 cup Super Power Paleo Granola (see recipe in Snacks section)

1/2 cup mixed fresh or frozen organic berries

Directions

Combine all ingredients except granola and berries in a blender and process at high speed until thick and creamy.  Pour into a bowl and mix berries into the smoothie, then top with Super Power Paleo Granola. 

The granola provides a great crunchy counterpoint to the pudding-like consistency of the bowl. 

Leftover smoothie makes a great afternoon snack!
